Ricardo Calderon and his wife and children own and operate the Los Angeles micro mill in Dota, Tarrazu. We’ve been lucky enough to buy coffee from them for several years, and on our recent visit we came across a lot from Don Cayito, a farm owned by Ricardo’s son Diego and named after his grandfather. A relatively new farm, it is also one of the higher altitude farms we’ve bought from this year. Many producers find themselves planting at higher altitudes as a response to climate change, as well as an interest in planting in cooler climates that slow down the maturation, which can have a beneficial effect on the cup quality. The altitude, the variety and the skillful processing by the family all contribute to this delicious coffee. We couldn’t resist it and we bet you’ll adore it too!
