This cascara has notes of melon, undertones of honey coupled with the sweetness of stewed fruits making for a delicious cup.
We recommend brewing this at 25 grams per litre with a steep time of about 7mins. Bag contains 300 grams of coffee cherry.

This cascara is from the Asociación de Familias Orgánicas de los Cerros Caraigres, a cooperative of 24 families who have chosen to farm by organic principles. Established in 1996, the coop now includes alternative farming families from about 20 different areas in Tarrazu such as Aserri, Acosta, Leon Cortes, Santa Marta de Dota and San Marcos. Joining their efforts to work in harmony with nature their mission is to protect the environment and preserve the health of the people. Each family has farms of about 3 hectares each, with half the land dedicated to coffee and the rest to fruits, forestry and native species that also act as shelter for wildlife. There are a few different ways to make cascara, this one is of the more traditional method where the husk from the fully natural processed coffee is separated at the dry mill. it result in a cascara much more reminiscent of the taste of fresh coffee cherries, with a rich, syrupy sweetness and honeyed pome fruits.
