BLACKBERRY/ RASPBERRY/ MARSHMALLOW
This is the very definition of a fruity coffee. While there are obvious flavours like apples and pears present in this coffee we settled on blackberries and raspberries. Alongside the fruit we have a toasted marshmallow flavour, making for a delightful and unique coffee.

This coffee is produced by Gillio Francesa Ferraro, whose 4 hectare farm lies just outside the town of Zarcero in the West Valley. Now in his eighties, he has enlisted the help of our mutual friend and coffee exporter Francesco Mena and the Sumava Micromill to process coffee on his behalf. It’s relationships like these and the development of Micromills within Costa Rica that mean great producers can carry on their trade. Gillio has a keen understanding of the artisinal nature of coffee farming and processing, and has an 8th place in the Cup of Excellence to prove it. His interpretation of the yellow honey process leaves a lot of mucilage on the coffee when drying, which lends a stonefruit note that really compliments the sweetness of the Catuai.
