Manuel Zaghi Mirón, along with his mother Maria, look after Finca Concepción Pixcayá. Founded in 1926, the property was purchased from the Catholic church and is now both a farm, a small restaurant and a seasonal hotel. A medium sized farm for the area, only 22 of the 150 hectares are planted with coffee. These plantings are mainly Bourbon, which has proven to perform so well in their location that the farm has placed in the Cup of Excellence four times. Only the higher part of the farm has the climate to produce speciality coffee, so a further 50 hectares on the lower slopes of the mountain is dedicated to other produce, while the rest is kept as natural forest. Sustainable agricultural practices are at the heart of the philosophy at Concepción and they produce their own organic fertilizer and conserve and filter water used in the processing of their coffee crop.
