With a very well-established supply chain in Costa Rica, it's not every day we get to introduce new partners. But, here it is! El Dama from the Verde Alto Micromill. Leonardo Cordero and his family manage Verde Alto in Leon Cortés. Traditional fully washed coffees in Costa Rica are referred to as "double washed" coffees and are an anomaly here. This is because most producers have mechanical de-mucilagers - machines that strip the cherry off more than a depulper - and don't use water to rinse the coffees afterwards. Verde Alto, however, has a more traditional depulper that one might see in other Central American countries, where the depulped coffee is floated and rinsed through a long channel. Leonardo also walked us around their farm, which borders the mill. Their cultivation style emphasises non-chemical methods, using organic material, intercropping, and microorganism application.
