Crisp and fresh, El Paseo comes to us from Nariño, Colombia, one of our favourite coffee-producing regions. Bright pineapple notes are rounded out with a honey and almond sweetness, making for a must-taste espresso.

El Paseo - 1

El Paseo, produced by Huber Castillo, embodies the intense fruitiness typical of coffee from Nariño, Colombia. Delightfully smooth with pineapple and almond notes shining against a velvety honey texture, we could not have asked for a better coffee to showcase the Nariño profile for an espresso. A double fermented lot, the cherry is washed and then sealed into oxygen-free tanks with the fermentation time calculated based on the PH levels of the fruit. To maintain the stability of the anaerobic process, the tanks are fitted with one-way valves allowing CO2 and other gases to escape. Once complete, the cherries are pulped and moved to water-filled vats for a further 60 hours of temperature controlled aerobic fermentation before the final stage of washing and drying. Left to dry below 38° C for 22 days, the anaerobic process makes for a deliciously full and complex espresso we can’t get enough of.
