A tropical fruit bomb produced by Yhon David Gomez, if you’re in the mood for something out of the ordinary - think a washed coffee tasting like a natural - El Trapiche has your name on it.

El Trapiche - 1

El Trapiche marks our first coffee from new work between sourcing company Tropiq's Colombian buyer, Enki Súarez, and exporters, San Martín.

An emerging exporter company owned by the Henao family, San Martín operates purchasing points and warehouses in Nariño, Cauca, and Huila. One of the two neighbouring farms we'll be showcasing from Nariño, Yhon David Gomez of El Trapiche, is the son of David Gomez, whose El Plan coffee is next on the list. Although these two farms are so close together in location, you'll be amazed by the difference in flavour caused by a variation in processing.

Allowing for an extra day of in-cherry fermentation on El Trapiche, Yhon David (leaning toward the current vogue of carbonic maceration) achieves a blast of tropical fruit and berry notes with a lactic mouthfeel. In contrast, David Gomez employs an extra day for dry tank fermentation, which leads to a more classic cup with black-currant flavours and a clean yet tannic profile.
