Sometimes when you take a fun variety and combine it with a fun process, you get double fun in the cup, and this is one of those coffees! A naturally processed Pacamara which is incredibly tasty and complex, and a great introduction to this farm. Osvaldo Perez runs Finca Flor de Cafe, over 100 hectares of coffee with 35 hectares of adjacent tropical rainforest, in Agua Dulce town in Huehuetenango. His grandfather used to grow sugarcane on the farm but in the 1940’s, Typica coffee trees were introduced by his father, and over time the farm has grown both in size and variety. Osvaldo now grows Catuai, Caturra, Pacamara, Geisha and Bourbon, and having built his own wet and dry mills, has full control over the quality from start to finish. It takes a very dedicated team to keep a coffee farm working, and with results like this unique coffee, we’re grateful for them doing such a great job!
