Over the last two years or so, we've been working hard at increasing our Peru offering. Finding many individual producers growing excellent quality small and micro-lots, we were also on the lookout for larger volumes. Introduced to The Aprocassi Cooperative, we found exactly what we were looking for: Guayacan, a complex, syrupy espresso full of deep nut and chocolate notes. Aprocassi, or Cooperative de Servicios Multiples Aprocassi, was founded in 2000. With its reach spanning across northern Cajamarca, Jean and San Ignacio, the coffees delivered by its 400 members are made up of a range of flavour profiles due to varying microclimates, adding to the complexity of the cup. With a significant focus on sustainability training, business training and funding, Aprocassi's entrepreneurial spirit has been both embraced and amplified by its members. More than just an income, coffee is seen as a way of life, a way we are honoured to share.
