Producer JAIME CASALLAS
Varieties CATURRA, COLOMBIA, SAN BERNARDO
Altitude 1560 MASL
Jaime Casallas and his wife Olimpa own and operate the El Prado farm in the small town of La Pradera in Huila. They have raised their three kids here: Francy Lorena, Jaime Jr and Luis Carlos. At 1560 masl, 4 out of the 5 hectare property are planted with coffee, specifically 16,500 Caturras, 300 Colombias and about 200 San Bernardo trees. The San Bernardo is a dwarf mutation of Typica, not widely grown these days due to a somewhat lower productivity and generally small bean size. However, due to the sometimes higher oil content of the bean, many consider the San Bernardo to be beneficial to the mouthfeel of the final cup. The Casallas are part of the El Desarollo coffee growers association and due to the exceptional cup quality of their lots, this very special 1 bag selection was set aside to be sold on its own which we’re delighted to include in Short Stories.
