We bought our first lot from the Juanachute mill in 2014, two years after Luis Castro Vindas built his micro-mill and started processing his own coffee. Luis and his son Abraham see milling for themselves as an investment for the future of their family and their work in coffee, and they are always exploring new methods of processing, such as this anaerobic fermentation, to learn and add value to their offering. Of the anaerobic process, Abraham says: ‘The anaerobic process consists of placing the coffee in a closed container so that the fermentation process takes place with no environmental factors influencing it other than the small amount of air in the tank and the sugars surrounding the coffee. We are still analysing this interesting method year on year and working on perfecting the process.’ We hope you agree with us that with this lot they have certainly been successful in their endeavour!
