We've enjoyed experimenting with La Cordillera from Nueva Segovia, Nicaragua. With such a wide range of flavours and distinct body, we are presenting it as both an espresso and filter to highlight the varying and core characteristics that come to the fore under the different roast curves. Some insight, we hope you will enjoy. When approached as a filter, this lot's bright acidity is accentuated, lifting its structure to medium-bodied against its inherent creamy sweetness. When you taste it next to the espresso, it becomes interesting. The espresso approach generally allows for more development, pushing the structure towards syrupy intensifying the sweet creaminess. Not all coffees have the structure to shine as an espresso and a filter, which adds to La Cordillera's appeal. One to play on repeat, in both its forms, La Cordillera is an instant hit. Enjoy the bright notes of red grape ring out as the macadamia custard chorus kicks in, a delightful cup indeed.
