Sweet, balanced and delightfully moreish, La Floresta offers notes of apple and hazelnut swimming in smooth caramel. A first-time purchase, La Floresta is precisely what we want from an espresso. Coming to us from Gaitania, Tolima, La Floresta is produced by Alberto Ramos. After inheriting the farm from his father, Gerardo Ramos, Alberto built a wet mill on the property, which he uses to experiment with new processing techniques. Producing exceptional micro-lots, Alberto processed this particular lot in a more traditional washed style. Once picked, the cherries were de-pulped and placed in large ceramic fermentation tanks. Left to aerobically ferment for 34 hours, the cherry was moved to raised beds to shade-dry, and the moisture content carefully monitored, resulting in this classic, clean and balanced cup.
