La Granada - 1

Adding sparkle to the shop, La Granada is a naturally processed Pink Bourbon micro-lot from Huila, Colombia. Produced by Gabriel Castaño in the Acevedo region of Huila, La Granada is delightfully fresh and distinctly different from the typical flavours that emerge from Huila. Clean, with vibrant fruit and floral notes, this lot is the coming together of exceptional processing and a rare variety. The hybridisation of Red and Yellow Bourbon, Pink Bourbon is caused by a recessive gene, a bit like eye colour. Challenging to process consistently, farmers have to isolate their trees to avoid the rare pink or orange varieties coming into contact and reverting to the dominating red or yellow genes through pollination. Once harvested, La Granada undergoes a prolonged fermentation period that includes 90 hours in tanks and 15 days on parabolic dryers, resulting in its distinctly clean and lively quality.
