Macho - 1

Efrain “Macho” Naranjo grew up around coffee, but spent some nine years of his life in New Jersey as a bagel baker before returning home to Costa Rica to buy his own coffee farms. His family now owns five farms in total, Macho, Evangelista, Palza, Trapiche and newly acquired La Union. The steep hills sloping down from the Santa Rosa 1900 mill where this coffee is processed are lined with mesh tables that let the sun and air gently dry the coffee. These drying beds have purposely been built close to a cliff edge which falls away sharply, meaning that coffees drying at one side of the beds catch the cool updraft and dry slower and at a cooler temperature than the rest of the coffee on the tables. This allows Macho to experiment with certain drying parameters, which is a flexibility that many other producers don’t have.
