San Andres from Metapán, Santa Ana satisfies with elegant black grape flavours and an undeniable caramel sweetness.
This honey-processed Pacamara lot made its first appearance last year in Sweet Shop, and we’re happy to have it back again as a soft-and-smooth filter profile. San Andres is the work of producer Jose Alfredo ‘Fredy’ Recinos. Inspired by his father to enter agriculture, Fredy initially focused on vegetable farming. However, in the early 2000s, his passion for coffee was sparked by neighbours who began cultivating it. Gradually, he acquired his first de-pulper, built drying beds, and expanded his expertise in various coffee processing techniques.
The Pacamara variety, in particular, requires extra care in every step due to the abnormally large size of each bean. Recinos’ honey process adds sweetness and creaminess to the cup while preserving a clean and crisp acidity.
