Santa Rosa 1900, produced by Luis Alberto Monge Ureñas and his brother Oscar Adolfo of La Lia farm, has officially taken its place as one of our Costa Rican coffee classics. Over the past six years, we’ve been lucky enough to follow their growth and explore various processes, placing their coffee at the top of our list. This year, however, Luis and Oscar presented us with a dazzling small lot of Red Honey process that quickly conquered our tastebuds and hearts. The red honey process is achieved by removing 25% of the mucilage, or flesh, around the coffee bean before leaving the cherry to dry openly. Influencing flavour development through slight fermentation, the red honey process results in a cup that is typically fruity, syrupy and sweet. Santa Rosa 1900 is a beautiful example of the skilful processing Luis and Oscar have built their reputation on, and precisely the kind we celebrate.
