At 1,600m, Rodrigo Figueroa’s El Recuerdo farm is the lowest of the three in this series, meaning he’s able to bring in more equipment to help keep his finished product consistent. In the cup, the coffee is syrupy and has a blast of orange flavours and an aftertaste of brown sugar.
Miguel Luna runs the La Falda farm, which is situated on a steep slope at an altitude of 1,700m. The youngest of the farmers in this series, Miguel makes use of modern production techniques, such as floatation and dry fermentation to produce a delicately balanced coffee with fantastic stone fruit and winter spice flavours.
Rodrigo Yandi’s farm sits at 1,900m, which brings a cooler climate and a longer ripening period for his coffee trees. This gives the final coffee a superb freshness and elegance with soft flavours of grape and berry. His farm is also extremely isolated, so work such as sorting, is carried out by hand.
