Look out for Cyato from Nyamasheke district, a syrupy and cranberry-like espresso showcasing an unlikely industry team-up. We have our frequent sourcing allies at North Star Coffee Roasters to thank for this expressive honey process from Cyato (chee-ah-toe) Washing Station. Exporter Tropic Coffee, led by Divine and Chris Rugira, owns and operates Cyato, which processes cherries collected by the Abadatezuka cooperative . North Star Founder Holly Kragiopoulos met the couple in 2018, and together they’ve led a grassroots expansion of coffee-related opportunities for local youth. The trio created a range of flavour profiles and community projects, with Cyato now a core partner in North Star’s sourcing. When the chance came to work with the fruits of their labour, we had to say yes. Square Mile’s profile offers marmalade sweetness and notes of hibiscus for a juicy single-origin espresso that celebrates industry synchronicity.
