Bookkisa has long been a cornerstone of our Ethiopian line-up. From Ture Waji’s acclaimed Sookoo Coffee at the Dambi Uddo Drying Station -renowned for outstanding naturals - this is only the second year it’s been processed and made available as a washed process.

As both a key component and highlight of our summer blend, Fruit Punch, Bookkisa Washed showcases the fresh citrus florals and caramel-toffee sweetness that define coffees from Ethiopia’s Guji Province. Roasted for espresso, it shines!

Named after the local kebele where the contributing farmers live and grow their coffees in the fertile clay-loam soils beneath the natural canopy of surrounding forests. Sookoo purchases ripe cherries and, after depulping them with a Penagos demucilager, washes and ferments the parchment for twelve hours before washing and transferring it to raised drying beds.
