ABOUT
Back for year two, this Half Caff combination of Rulindo’s Cocatu and Oaxaca’s Decaf EA Union San Pedro is quite a treat! Notes of fine tea with honey merge with the sweet, nutty profile of ethyl-acetate decaf, combining favourites from both East Africa and the Americas.
Redolent of white currant and sultana, you’ll recognise the delightful Cocatu from Tumba in Rwanda’s Rulindo district. Kinini Washing Station purchases cherries from the Cocatu producer group and creates this impeccable washed lot. Per usual, Kinini’s processing here is exceptionally clean, highlighting the piquant, sweet gooseberry acidity that we love in the Bourbon variety from this terroir.
Union San Pedro is our key partner in the Sierra Sur region of Mexico’s Oaxaca state, and this ethyl acetate decaffeinated version was made using the same base we featured in The Filter Blend earlier this year. Members across the board have focused heavily on improving processing and fermentation, yielding truly astonishing results. Although this is a classic washed lot, the longer fermentation times -now standard - have given this lot even more structure and sweetness.
