Oaxaca’s Union San Pedro meets Tarrazú’s Macho for a warming version of The Filter Blend! This particular pairing highlights adaptability: both problem-solved for big fluctuations in climate and pricing during this year’s harvest. The resulting cup offers notes of baked apples drizzled in syrup.
First up in our 2025 Mexico showcase is Union San Pedro (USP) from the Sierra Sur region of Oaxaca, Mexico. On a visit during this year’s harvest, we noted the remarkable transformation of the cooperative over the past three years, with heavy investment in biofertilisers and expanded operations to eight additional communities. Producers have also focused on improving processing and fermentation, moving beyond short 12-hour fermentations to achieve. Lots from twenty-six USP members compose our blend.
A true Square Mile classic, we enthusiastically welcome Macho from Tarrazú, Costa Rica. Producer Kevin Naranjo adapted to heavy rains during harvest by experimenting with a new process, a rested white honey, which involved resting cherries for 2-3 days and then demucilaging completely. His attention to detail consistently impresses with great flavour clarity.
