Driven by their deep-rooted heritage and a profound passion for quality, the Gasca family has established the Zarza project, focused on innovation, traceability, and sustainability.
Zarza represents a new style of Colombian producer who controls not only their coffee process, but also their global brand. The family has gained recognition in barista competitions for their celebrated range of unusual varieties, such as Papayo. However, the complexity behind this lot, using cherries from the staple "run of the mill" Cenicafe cultivar Colombia, is really a credit to their fantastic skill in processing.
