Bringing golden rays of sweetness, and comforting compote-like textures, Ayacucho, from Peru, is sure to be your new go-to for those delightfully bright mid-morning brews.
Grown in the mountains of Ancco in Peru’s southern Cusco region, overlooking views of the Apurímac River valley, this tasty washed lot was produced by the Ayacucho Collective - a co-operative of sixteen coffee-producing families. The families work through longstanding Andean farming practices, such as ‘ayni’ - values of reciprocity and collective work inherited from the Incas, that hold a “today for you, tomorrow for me” sentiment, and form the foundations of their communities.
Farms rich in native shade trees and fertile volcanic soil protect the coffee trees and produce high-quality cherry, harvested between May and September, with balanced body, sweetness, acidity, and aroma. Fieldwork is done using machetes to further preserve the quality of the soil, ensuring consistent quality, as well as financial and ecological sustainability for the families and their farms.
The only coffee from Cusco, in Southern Peru, to feature on our lineup this year, Ayacucho makes for a sweet and rich comfort-in-a-cup filter brew.
